RØDKÅL (Sour Red Cabbage)

  • 1 head red cabbage
  • 3 apples
  • 1 Tbsp. sugar
  • 2 Tbsp. vinegar
  • 3 Tbsp. butter
  • salt to taste
  • 4 Tbsp. red wine
  • 1 tsp. caraway seeds
Sour Red Cabbage (Rodkaal)
  1. Shred cabbage, [clean, core &] slice apples and put all in heavy kettle.
  2. Add sugar, vinegar, butter and salt. Mix.
  3. Cook slowly for 3 hours.
  4. Add caraway seed and wine in last 15 minutes.
  1. Option:Use apple juice in place of wine to reinforce apple taste if desired.
  2. Great with pork roast.
  3. Serve either hot or cold.
  4. When in a hurry and no time to make, purchase either the jarred red cabbage or the vacuum sealed packs and add caraway seeds as desired when heating.
